Tony Layson started Hay Honey in 2026 and learned the craft of beekeeping with his grandfather over 12 years ago, beginning a journey rooted in tradition, craftsmanship, and a deep respect for nature. Side-by-side with his grandfather, Tony developed not only technical expertise, but also an appreciation for the patience, discipline, and stewardship required to produce truly exceptional honey. What began as a hands-on learning experience quickly grew into a family venture built on quality, integrity, and a commitment to Idaho’s bees. Our operation is located on 800 acres of timothy hay, fruit trees, and a wide variety of wildflowers on a farm just South of Coeur d’Alene.
Today, Tony carries forward that legacy by combining time-honed methods with modern techniques to ensure each jar of Hay Honey reflects the dedication and care that first inspired the business. His passion for beekeeping goes beyond production; it’s about preserving tradition, supporting Idaho ecosystems, and sharing a product that connects people.
